Cranberry sauce is usually made from the pulp of fresh, dried cranberries, which are often ground up and then blended into a thick, creamy sauce.
The recipe for the original cranberry wine is a bit of a mystery, but we think it involves a simple addition of water, a little rum and sugar.
In this recipe, the cranberries are crushed and then soaked in a little wine and stirred into the sauce, while the remaining cranberries soak in the alcohol.
To make the sauce more sweet, we add a bit more rum and some sweetened condensed milk.
We think this makes a good base for a cranberry cocktail, but be careful to keep the alcohol level as low as possible.
Ingredients: 1kg cranberries 3kg white vinegar 2kg honey 1kg water 2kg sugar (about 1.8 cups) 4 tablespoons of butter (1/4 cup) 1 teaspoon of cinnamon 1 teaspoon salt (1.4 tsp) 1/4 teaspoon black pepper (1) 1-2 tablespoons of rum (about 3.8ml) 3 tablespoons of sweetened concentrated milk 1 teaspoon (1 ml) of maple syrup Directions: 1.
Wash the cranberry pulp and crush it into a paste with a fork.
Add the vinegar, honey, water and sugar to a medium saucepan and bring to the boil.
Simmer for 5 minutes, stirring occasionally, until the cranumbers are cooked.
Remove from the heat and cool to room temperature.
Cut the cranmer into cubes, about 1 cm long.
Cut them into 2cm-long cubes and add to the saucepan with the remaining sugar and butter.
Bring to the simmer and continue to simmer until the syrup has thickened, about 30 minutes.
Add a bit extra water if needed to make the cranffier thicker.
The cranberries will absorb the syrup and make it more concentrated.
